When you need dinner in a flash, the sides need to be a snap as well. These easy side dishes will have your family eating in no time!

Kristyn’s Tips for Side Dishes

  • POTATO DISHES: Plan on 3/4 cups per person. Two
    medium-size russet potatoes will serve 2–3 people,
    3–4 potatoes will serve 5 people, 8 potatoes will serve
    10 people and 15–16 potatoes will serve 20 people.
  • RICE DISHES: 1⁄2 cup per person
  • PASTA SIDES: 1⁄2 cup per person
  • VEGETABLE DISHES: 1 cup per person
  • ADD VARIETY: Sides should complement your meal and provide contrasting flavors and textures. Serve both hot and cold sides together, and try not to repeat ingredients. If you are serving pork as the main dish, then don’t choose sides that also contain pork.
  • PLAN AHEAD: When choosing sides for a large party or a holiday, pick dishes that use different cooking methods (oven, stovetop, slow cooker, etc.) to make things easier in the kitchen.
  • You can save time the day of by prepping many ingredients individually in advance:
    • Wash and chop veggies 1–2 days ahead and store them in separate containers in the refrigerator.
    • Wash and chop raw potatoes and store in a bowl of water in the refrigerator for up to 24 hours. Drain and pat dry before using.
    • Make dressings and sauces ahead and store it in a separate container in the refrigerator; add right before mixing and serving.
    • Cook pasta a day ahead, drain, and toss lightly in olive oil before storing in an airtight container in the refrigerator.
    • If you want to cut fruits ahead of time that brown quickly, such as apples or bananas, use a squeeze of lemon juice or lime juice to keep them from browning. Mix 1 cup water and 1 tablespoon citrus juice in a bowl and submerge fruit for a few minutes, then remove and store in an airtight container in the refrigerator.
