Boneless or Bone In?
- Bone-in chicken breasts have the skin and rib bone attached. The skin keeps the chicken moist and juicy and depending on the cooking method, can give a nice crunchy texture. The bone helps distribute heat evenly throughout the cut of meat which also helps keep the chicken moist and tender.
- Boneless skinless chicken breasts are perfect for meals that call for chicken cutlets, like casseroles, soups, stews, pasta, Chicken Stir Fry, and more. They cook more quickly than bone-in breasts so be watchful when grilling or baking and be careful they don’t overcook.
How to keep Chicken Moist?
- Preheat. Whether baking, pan frying, or grilling, preheat so the chicken can immediately begin cooking.
- Skin on. Leaving the skin on the chicken breast will help keep juices inside yielding a moist dish.
- Even thickness. Chicken breast is naturally thicker in the upper section, then thins out toward the tip which may cause uneven cooking. Use a meat mallet to pound the thick part to make it more even throughout.
- Brining or marinating will help tenderize and keep the chicken moist.
- Rest time. Allows time for the flavors and juices to distribute evenly and the temperature to rise the final 5 degrees.
Top Chicken Breast Cooking Tips?
- Room temperature. Allow chicken to come to room temperature for 20-30 minutes before cooking.
- Don’t overbake. Cook to an internal temperature of 160ยฐF (check with a meat thermometer) then allow it to sit for a few minutes before serving. This resting time will allow for all the flavors and juices to disperse through the breast. The temperature will also rise the final 5ยฐ needed for a perfect cook.
- Seasoning suggestions. Some popular options include a little olive oil, garlic powder or garlic salt, black pepper, Italian seasoning, oregano, lemon pepper, lemon juice, paprika, and cayenne.
- For sauces, we love our Teriyaki Sauce, BBQ Sauce, and Basil Pesto Recipe.
- Bake. These are general guidelines for 6 ounce boneless skinless chicken breasts.
- 350ยฐF: 25-30 minutes for larger bone-in breasts bake 45-60 min.
- 375ยฐF: 20-25 minutes for larger bone-in breasts bake 40-50 min.
- 400ยฐF: 18-20 minutes for larger bone-in breasts bake 35-45 min.
- 425ยฐF: 15-18 minutes for larger bone-in breasts bake 30-40 min.
- Pan fry. Bring oil temperature to 350ยฐF. Place breasts in the pan. Once they begin to brown, reduce the heat to medium-low. Cook bone in 15-30 minutes, flipping halfway. Cook boneless skinless for 12-15 minutes, flipping halfway. Rest for 8-10 minutes.
- Grill. Preheat the grill to 400-450ยฐF. Grill bone-in for 20-24 minutes over direct high heat, flipping halfway. Grill boneless skinless for 12-16 minutes over direct high heat, flipping halfway.
