Hello, it’s me Lily! Did you know what I did this week?! Me and my mom went to New York City. We went to Carlo’s Bakery, the Statute of Liberty and even ice skated in Rockefeller Center. We also got to go to the Today Show and got to walk the Brooklyn Bridge!! I made a sign for the TV that said, “Grandma, did you see me?”

It was a great week and I hope we get to go back to NYC one day! It was so fun and there was so much good food. Speaking of good food – do you like dessert? My mom and I made these Gooey Coconut Bars a long time ago for my friend’s baptism. They were so good! I begged my mom to have two, but she said I could only have one so everyone could try them. I really think you’ll like them! They remind me of the Gooey Butter Bars we’ve been making for years!!

If you love coconut, you’ll love this recipe. It’s not too coconut-y, but if you do like flavor you can always add more coconut flavoring to the recipe. We thought they were so YUMMY!

This is a great treat for parties or get togethers. I hope your kids like them as much as I liked them!!

Ingredients

CRUST

  • 1 box Yellow cake mix
  • 1 egg
  • 1/2 cup butter melted

FILLING

  • 8 oz cream cheese softened
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp coconut extract
  • 2 cups powdered sugar
  • 1/2 cup butter melted

TOPPING

  • 1/2 cup sweetened coconut
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 3 tbsp butter melted
  • 1/2 cup flour

Instructions

  1. Preheat oven to 350.

  2. Mix together cake mix, egg and ½ cup melted butter in a bowl. Spread into a greased 9x13 pan.
  3. In another bowl, cream together cream cheese, 2 eggs, vanilla, coconut extract, powdered sugar and ½ cup melted butter. Mix well and pour over crust.
  4. Make topping by mixing together coconut, brown sugar, sugar, butter and flour. Mix with hands until crumbly and sprinkle over filling layer.
  5. Bake for 35 - 40 minutes or until the center does not jiggle. Let set for half hour before cutting and serving. ENJOY!
